With the weather being colder, I am in the mood for some home made soup and went looking on the internet for some recipes...I came across this delightful site and wanted to share it with you as the recipes look soooo yummmmy!

Joe's Hearty Cabbage Beef
Vegetable Soup

Yield: 8 to 10 Servings
3 Cups Beef Broth
3 Cups Water
1/8 Cup Vegetable Oil
1 Package Beef Stew Meat Quartered
2 Medium Yellow Onions Sliced
3 Carrots Sliced
1/2 Large Cabbage Chopped
2 Cups Fresh Mushrooms Sliced
3 Medium Potatoes Diced
2 Pods Fresh Garlic Minced
Salt & Course Black Pepper To Taste
In A Soup Pot Heat The Oil, Add The Stew Meat, Garlic, Onions, Salt & Course Pepper. Cook On Medium Heat Until Browned Approx. 6 Minutes. Stir In Beef Broth, Water, Carrots, Reduce Heat & Simmer For 30. Add Mushrooms, Potatoes & Cabbage Simmer 30-40 Minutes Until Done. You Can Omit The Meat If You Choose To & Just Lightly Saute The Garlic & Onions. Great Served With Warm Home Made Bread Or Hot Rolls.
Joe's Country Mushroom
Barley Soup

Yield: 8 to 10 Servings
4 C. Mushrooms, Sliced
1 C. Carrots, Shredded
1 C. Tomatoes, Diced
1 C. Celery, Chopped
1/2 C. Pearl Barley
1/2 C. Fresh Parsley, Chopped
1/2 tsp. Course Black Pepper
5 1/2 C. Water
Salt To Taste
Combine; Mushrooms, Carrots, Tomatoes, Celery, Barley, Parsley, Black Pepper, & Water In A Large Soup Pot.Bring The Soup To A Boil, Reduce The Heat, Cover The Pan & Simmer For 1 Hour. Season To Taste.
Quick & Hearty Chicken
Minestrone Soup

Yield: 8 to 10 servings
1 C. Water
1 Tablespoon Vegetable Oil
1/2 Chopped Green Peppep
1 Medium Pod Chopped Fresh Garlic
2 16oz. Cans Rinsed Pinto Beans
2 Cans 14 1/2oz. Chicken Broth
2 Cans 14 1/2oz. Stewed Tomatoes
1 Tsp. Italian Seasoning
1 Cup Dried Uncooked Noodles
1/3 Cup Shredded Mozzarella Cheese
Salt & Course Black Pepper To Taste
In A Soup Pot Heat Oil, Add Water, Green Pepper, Onion & Garlic, Cook Over Medium Heat Until The Onion Is Transparent. Approx. 6 Minutes.
Stir In Beans, Chicken Broth, Stewed Tomatoes & Italian Seasoning. Bring To Boil, Reduce Heat To Low, Add Noodles & Cook Until Noodles Are Tender Approx.10 Minutes. Sprinkle With Shredded Mozzarella Cheese & Serve Hot.
Joe's Quick & Hearty
Vegetable Soup

Yield: 6 to 8 Servings
4 Cups Chicken Or Beef Broth
1 Cup Water
1/8 Cup Vegetable Oil
1/8 Cup Parsley, Chopped
1 Large Clove Garlic, Chopped
1 1/2 Cups Shredded Cabbage
1 Medium Yellow Onion, Chopped
2 Stalks Celery, Chopped
1 Can Stewed Or Fresh Tomatoes,Chopped
1/2 Pound Fresh Mushrooms, Sliced
1/2 Cup White Or Wild Rice
Salt & Black Pepper To Taste
Heat Oil In A Soup Pot Add Parsley & Garlic, Saute Over Medium Heat Until Lightly Browned.
Add Remaining Vegetables, Broth & Water. Cover & Reduce Heat. Simmer For Approx. 1 Hour.
Joe's Healthy Split
Pea Soup

Yield: 6 to 8 Servings
2 Cups Dry Split Peas
12-14 Cups Water
2 Carrots, Sliced
1 Small Pod Fresh Garlic, Diced
1 Medium White Onion, Chopped
1 Medium Bay Leaf, Whole
Salt & Pepper To Taste
In A Large Soup Pot Combine All Ingredience. Bring To Rapid Boil.Reduce Heat To Medium & Cook Uncovered Stirring Occasionally. Approx.1 1/2 Hrs.
Left Over Turkey?
Delicious Turkey Soup

Yeilds 6 to 8 Servings
2 Cups Diced Cooked Turkey
1 Onion (yellow) Chopped
1 Cup Clery Diced
1 Cup Carrots Diced
1 Cup Fresh Sliced Mushrooms
1 Tsp. Dried Basil
1/2 Tsp. Dried Rosemary
1 Pod Garlic Smashed or Finely Diced
2 Tsp. Butter
1 Large Can Approx. 3 Cups Chicken Broth
2 Cups Diced Potatoes
1 Cup Whole Milk
1/2 Cup Sour Cream
Parsely Flakes For Garnish
Saute The Vegatables (With The Exception Of The Potatoes), Basil, Garlic & Rosemary In The 2 Tsp. Butter Until Lightly Browned. Add Potatoes, Turkey & Broth. Simmer Approx. 15 Minutes. Reduce Heat Add Milk Salt & Pepper To Taste. Simmer 20.
Remove From Heat & Serve Hot With A Hearty Dab Of Sour Cream & A Sprinkle of Parsely For Garnish.
Heavenly Chicken Garlic Soup

Yields 6 To 8 Servings
1 Whole chicken, disjointed
2 Carrots, minced
2 Stalks celery, minced
1 Large Whole yellow onion
Chopped fresh parsley
Salt and pepper to taste
5 Cloves garlic, chopped
4 T Softened butter
2 T Flour
Make the chicken broth by simmering chicken, carrots, celery, onion, garlic, parsley, salt and pepper in enough water to cover. When the chicken is thoroughly cooked, remove it and skim the fat from broth.
Simmer broth, reducing it until it is very rich. Add the flour and butter to a small amount of broth and mix with a wire whisk until velvety. Pour this mixture into the remaining broth. Tear chicken into bite-sized pieces and add to the soup. Sprinkle with fresh parsley and serve.
4 cups Quaker oats (quick or old fashioned, uncooked)1/2 cup shredded coconut1/2 cup chopped pecans 1/2 cup honey1/4 cup raw, unsalted sunflower seeds (optional)4 tablespoons (1/2 stick) butter or margarine, melted2 teaspoons grated orange peel one teaspoon vanilla1/2 teaspoon ground cinnamon1/4 teaspoon salt (optional)One 6-ounce package dried cranberries (about 1-1/3 cups)Heat oven to 350°F.
In large bowl, combine oats, coconut,pecans, honey and sunflower seeds; mix well. In small bowl, combine butter, orange peel, vanilla, cinnamon and salt; blend well. Drizzle butter mixture over oats mixture; mix well. Spread evenly in 15 x 10-inch jelly roll pan.Bake 40 minutes or until golden brown, stirring every 10 minutes. Remove granola from oven; stir in cranberries. Cool completely in pan. Store tightly covered in a cool, dry cabinet up to 2 weeks.6-1/2 Cups.
Quick & Easy Peanut Butter Lovers Brownies
1 Cup Peanut Butter
1/2 Cup Butter Softened
2 Cups Packed Brown Sugar
3 Large Eggs
1 Tsp. Vanilla
1 Cup All-Purpose Flour
1/2 Tsp. Salt
Pre-Heat Oven 350%
Grease Square Pan. Beat Peanut Butter & Butter Together Until Smooth. Add Eggs, Sugar & Vinilla. Beat Until Fuffy. Stir In Flour. Mix Well. Spread Into Pan. Baker At 350% For 30 To 35 Minutes. Please Note: You Can If You Wish Use A Hand Held Electric Mixer To Beat Ingrediance Together. Enjoy! We Made These For A Quick Snack For The Holidays & They Went Over Big With Our Peanut Butter Loving Friends!
